A Healthy Valentine's Dessert
It’s easy to over indulge on Valentine’s… Rich dinners, chocolate, whipped cream. If you’re looking to take it easy on the sweets try this easy-to-make Date Nut Torte! No need to soak the walnuts before so this can be made last minute.
Raw Date Nut Torte:
Base of Torte:
2 cups raisins
2 cups walnuts
1 cup dates, soaked (15mins) and pitted
1/2 lemon, juiced
In a food processor, combine raisins and walnuts and blend until well combined and moist (this will take few minutes and you might see it form into a ball…just make sure the raisins come out fudgey and not grainy). Then, remove mixture from processor and press into a pie plate or dinner plate (about 1 1/2 inches thick).
In a food processor, combine dates and lemon juice until smooth and creamy. Spread the frosting on top of the torte.
Top with raspberries, strawberries , or blueberries!
Serve at room temperature or chill depending on your preference.
